Ingredients
6 large eggs
1/2 cup low-fat cottage cheese
1/2 cup shredded cheddar or Gruyère
1/4 teaspoon salt
1/4 teaspoon black pepper
Optional: cooked bacon bits or chopped spinach
Instructions
1. In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth and slightly frothy.
2. Spray a silicone muffin mold with nonstick spray. Pour the mixture evenly into each cavity, filling about 3/4 full. Top with cheese and optional ingredients.
3. Place the mold in your air fryer basket. Cook at 360°F (182°C) for 12 minutes, or until set in the center. Let cool 5 minutes before removing.
Notes
Use silicone molds for even cooking and easy release.
Resting after cooking helps set the texture.
These bites can be stored refrigerated for up to 4 days or frozen for 2 months.
