This easy sloppy joe recipe uses just three main ingredients for the filling so you can get dinner on the table in about 15 minutes. Lean ground beef, ketchup, and mustard simmer together into a sweet-and-tangy sauce that feels classic but a bit lighter. You can keep it strictly three ingredients or add optional spices for extra depth. Serve on toasted buns with pickles or slaw for a simple, high-protein weeknight meal.

1 lb (450 g) lean ground beef (about 90% lean) or ground turkey

3/4 cup ketchup (regular or no-sugar-added)

2 tablespoons yellow mustard

Optional: 1–2 teaspoons Worcestershire sauce

Optional: 1 teaspoon onion powder

Optional: 1/2 teaspoon garlic powder

Optional: 1/2 teaspoon smoked paprika or chili powder

Optional: 1–3 tablespoons water, as needed for texture

4 burger buns, for serving

Pickle slices and coleslaw, for serving (optional)

Instructions

1. Place a large skillet over medium-high heat, add the ground beef or turkey, and cook while breaking it up with a spatula until no pink remains, about 5–7 minutes.

2. If there is a lot of grease in the pan, carefully drain off most of it, leaving just a thin coating so the meat stays moist.

3. Reduce the heat to medium-low, then add the ketchup and yellow mustard to the skillet and stir until the meat is evenly coated in sauce.

4. If using optional Worcestershire sauce, onion powder, garlic powder, or smoked paprika, add them now and stir well to combine.

5. Let the sloppy joe mixture simmer on low heat for 3–5 minutes, stirring occasionally, until the sauce thickens and clings to the meat; add 1–3 tablespoons of water if it looks too thick.

6. Taste the mixture and adjust with a pinch of salt, pepper, or a little extra ketchup or mustard if you want more sweetness or tang.

7. Lightly toast the burger buns in a dry skillet or under the broiler for 1–2 minutes until golden, if desired.

8. Spoon the hot sloppy joe filling onto the buns, top with pickles or slaw if you like, and serve immediately.

Notes

For a true three-ingredient filling, stick to just ground beef, ketchup, and mustard and skip the optional spices.

Use 90% lean ground beef or ground turkey to keep the sandwiches high in protein but a bit lower in fat.

If you prefer less sweetness, choose a no-sugar-added ketchup or use half regular ketchup and half tomato sauce.

The filling keeps well in the fridge for 3–4 days and can be frozen for up to 3 months; reheat gently with a splash of water.

Serve on gluten-free buns or over baked potatoes or roasted vegetables if you need a gluten-free or lower-carb option.
