Ingredients
12 large eggs
1 cup low-fat cottage cheese
1 cup shredded cheddar or Gruyère cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
Optional: cooked bacon bits, chopped spinach, diced peppers
Instructions
1. Blend eggs, cottage cheese, salt, and pepper until smooth.
2. Spray silicone muffin molds with nonstick spray and fill 3/4 full.
3. Top with cheese and any add-ins you prefer.
4. Air fry at 360°F (182°C) for 12–14 minutes or bake at 325°F (163°C) for 25 minutes.
5. Let cool completely before storing in airtight containers.
Notes
For best results, cool egg bites fully before refrigeration or freezing.
To reheat, microwave for 30–45 seconds or air fry for 2–3 minutes.
