This popular slow cooker recipe delivers incredibly creamy, cheesy, and savory shredded chicken that’s perfect for meal prep and low-carb dinners. It’s an easy, dump-and-go meal with minimal cleanup.

  • Total Time: 8 hrs 10 mins
  • Yield: 6 servings

Ingredients

Scale

2 lbs Boneless, skinless chicken breasts

8 oz Cream cheese, cubed

1 cup Cheddar cheese, shredded

6 slices Bacon, cooked and crumbled

1 oz packet Ranch seasoning mix (low-carb, ensure sugar-free)

1/4 cup Chicken broth

Instructions

1. Place chicken breasts, cream cheese, ranch seasoning, and chicken broth in the slow cooker.

2. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken easily shreds.

3. Shred the chicken directly in the slow cooker using two forks.

4. Stir in the shredded cheddar and crumbled bacon. Cook until the cheese melts completely and the mixture is creamy (about 15 minutes).

5. Serve the Crack Chicken in lettuce wraps, over cauliflower rice, or in bell pepper halves. Garnish with chives or green onions.

Notes

Net Carbs: Approximately 4g per serving. Always verify your ranch seasoning is low-carb/sugar-free. For a smoother finish, use full-fat cream cheese.
