Ingredients
6 large eggs
1/4 cup heavy cream (or unsweetened almond milk)
1/3 cup chopped spinach
1/4 cup shredded cheddar cheese
1/4 cup diced bell peppers
Salt & pepper to taste
Optional: garlic powder or chili flakes
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a muffin tin or use silicone liners.
2. In a bowl, whisk eggs and cream until combined.
3. Stir in spinach, cheese, peppers, and seasoning.
4. Divide mixture into 6 muffin cups (3/4 full).
5. Bake for 18–20 minutes until set and golden.
6. Let cool slightly and enjoy warm or cold.
Notes
You can store these muffins in the fridge for up to 4 days.
Reheat in microwave for 20–30 seconds.
Great for meal prep or lunchboxes.
