Ingredients
3 ripe bananas, mashed
¼ cup melted coconut oil
½ cup brown sugar
1 tbsp flaxseed + 3 tbsp warm water
½ cup almond milk
1 tsp vanilla extract
1 ½ cups all-purpose or oat flour
1 tsp baking soda
½ tsp cinnamon
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C).
2. Mix flaxseed and warm water, set aside 5 minutes.
3. Mash bananas and combine with oil, sugar, almond milk, and vanilla.
4. Stir in flour, baking soda, cinnamon, and salt until just combined.
5. Pour into a greased loaf pan.
6. Bake 55–60 minutes, until toothpick comes out clean.
7. Cool 15 minutes before slicing.
Notes
Store in fridge up to 5 days or freeze for 3 months.
Add walnuts or chocolate chips for variation.
