Ingredients
1 cup quinoa, rinsed
2 cups broccoli florets
1 cup sliced mushrooms
1 onion, diced
3 cloves garlic, minced
1 cup raw cashews (soaked)
1 ½ cups vegetable broth
2 tbsp olive oil
2 tbsp nutritional yeast
1 tsp lemon juice
Salt and pepper to taste
¼ cup breadcrumbs (optional)
Instructions
1. Preheat oven to 375°F.
2. Sauté onions, garlic, and mushrooms in olive oil for 5 minutes.
3. Blend soaked cashews, broth, nutritional yeast, and lemon juice until smooth.
4. Combine quinoa, broccoli, sautéed mix, and sauce in a baking dish.
5. Top with breadcrumbs and bake for 30–35 minutes, until golden and bubbling.
6. Cool slightly before serving.
Notes
Freeze portions for up to 3 months.
Reheat in oven at 350°F for 15 minutes.
Great with a side salad or lemon balm tea.
