Ingredients
2 cups mixed lentils
1 can coconut milk
1 cup chopped mushrooms
1 red bell pepper, diced
2 carrots, sliced
1 onion, minced
3 cloves garlic
2 cups vegetable broth
1 tbsp curry paste
1 tsp smoked paprika
Salt and pepper to taste
2 tbsp olive oil
Instructions
1. Sauté onions and garlic in olive oil until fragrant.
2. Add carrots, mushrooms, and peppers, cook for 5 minutes.
3. Transfer to crockpot with lentils, broth, and spices.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
5. Add coconut milk in the final 30 minutes.
6. Adjust seasoning and garnish with herbs before serving.
Notes
