Ingredients
1 cup arborio rice
1 onion, diced
2 cloves garlic, minced
2 cups mushrooms, sliced
3 cups vegetable broth (warm)
2 tbsp olive oil
2 tbsp nutritional yeast
Salt & pepper to taste
Fresh parsley for garnish
Instructions
1. Sauté onions and garlic in olive oil until fragrant.
2. Add mushrooms and cook until softened.
3. Stir in rice; toast for 1 minute.
4. Add broth one cup at a time, stirring continuously.
5. Once creamy, stir in nutritional yeast and seasonings.
6. Garnish with parsley and serve warm.
Notes
Use cashew cream for extra richness.
Pairs beautifully with vegan pesto or grilled vegetables.
