Ingredients
2 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
1 cup brown lentils
4 cups vegetable broth
1 tsp smoked paprika
Salt and pepper to taste
Fresh spinach (optional)
Instructions
1. Heat oil in pot; sauté onion, carrot, and celery until soft.
2. Add lentils, broth, and paprika; bring to boil.
3. Reduce heat and simmer 30 minutes.
4. Season and stir in spinach before serving.
Notes
For creamier texture, blend half the soup.
Store leftovers refrigerated up to 4 days.
