1 cup gluten free all-purpose flour blend (with xanthan gum)

1/2 cup fine almond flour

2 tablespoons ground flaxseed or chia seeds

1/2 teaspoon baking powder

1/2 teaspoon fine sea salt

1 teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons mixed dried herbs or seeds (rosemary, sesame, or everything seasoning)

3 tablespoons extra-virgin olive oil

56 tablespoons warm water (as needed)

Flaky sea salt for sprinkling (optional)

Instructions

1. Preheat the oven to 375°F and line a baking sheet with parchment paper.

2. Whisk the gluten free flour blend, almond flour, ground flax, baking powder, salt, garlic powder, onion powder, and herbs or seeds in a medium bowl.

3. Drizzle in the olive oil and stir until the mixture looks evenly moistened and sandy.

4. Add the warm water 1 tablespoon at a time, stirring until a soft, flexible dough comes together that does not crumble.

5. Shape the dough into a ball and place it between two sheets of parchment paper.

6. Roll the dough very thin, about the thickness of a coin, so the crackers turn crisp in the oven.

7. Peel off the top sheet of parchment and transfer the bottom sheet with the rolled dough to the baking sheet.

8. Score the dough into small squares or rectangles with a sharp knife or pizza cutter.

9. Sprinkle the top lightly with flaky sea salt if you want extra crunch and flavor.

10. Bake for 12–16 minutes, rotating the pan halfway through, until the edges look golden and the center feels firm.

11. Cool the entire sheet on a rack, then break along the score lines into individual gluten free crackers.

12. Store the crackers in an airtight container at room temperature for up to 5 days.

Notes

For a seed-heavy version, replace 2 tablespoons of the gluten free flour with extra sesame or sunflower seeds.

For a cheesy flavor without dairy, add 2 tablespoons nutritional yeast to the dry ingredients.

If the dough cracks while you roll it, gather it up, add 1 more teaspoon of warm water, and roll it again.

Serve these gluten free crackers with hummus, nut butter, cheese, or soup for a balanced snack or light meal.
