- 2 cups (160 g) old-fashioned rolled oats, certified gluten free if needed
- 2 tablespoons (24 g) chia seeds
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg

- 2 cups (454 g) 2% cottage cheese
- 4 large eggs
- 1/2 cup (120 ml) 2% milk
- 1/2 cup (120 g) unsweetened applesauce
- 1/4 cup (60 ml) pure maple syrup
- 2 teaspoons pure vanilla extract
- 2 medium crisp apples, cored and diced into 1/4-inch pieces (about 300 g)
- Cooking spray or butter for the baking dish
Instructions
- Preheat the oven to 350°F. Coat a 9-inch square baking dish with cooking spray or a thin layer of butter.
- Combine the rolled oats, chia seeds, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Add the cottage cheese, eggs, milk, applesauce, maple syrup, and vanilla to a blender. Blend for 30 to 45 seconds, until completely smooth.
- Pour the blended mixture over the oats and stir until evenly moistened. Fold in the diced apples.
- Let the mixture rest for 10 minutes so the oats and chia seeds begin absorbing liquid.
- Transfer the mixture to the prepared dish and spread the apples into an even layer.
- Bake for 40 to 45 minutes, until the edges are lightly golden and the center is set. If the center still ripples when the pan moves, bake for another 3 to 5 minutes.
- Cool for at least 15 minutes, then cut into 8 portions and serve warm.
Notes
- Use old-fashioned rolled oats. Quick oats produce a softer texture, and steel-cut oats are not a direct substitute.
- Dice the apples into small, even pieces so they soften during the baking time.
- Use certified gluten-free oats and verify all packaged ingredients when gluten cross-contact is a concern.
- Refrigerate cooled portions for up to 4 days or freeze them for up to 2 months.
