  • 2 cups (160 g) old-fashioned rolled oats, certified gluten free if needed
  • 2 tablespoons (24 g) chia seeds
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon fine salt
  • 2 cups (454 g) 2% cottage cheese
  • 4 large eggs
  • 1/2 cup (120 ml) 2% milk
  • 1/2 cup (120 g) unsweetened applesauce
  • 1/4 cup (60 ml) pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 medium crisp apples, cored and diced into 1/4-inch pieces (about 300 g)
  • Cooking spray or butter for the baking dish

Instructions

  1. Preheat the oven to 350°F. Coat a 9-inch square baking dish with cooking spray or a thin layer of butter.
  2. Combine the rolled oats, chia seeds, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  3. Add the cottage cheese, eggs, milk, applesauce, maple syrup, and vanilla to a blender. Blend for 30 to 45 seconds, until completely smooth.
  4. Pour the blended mixture over the oats and stir until evenly moistened. Fold in the diced apples.
  5. Let the mixture rest for 10 minutes so the oats and chia seeds begin absorbing liquid.
  6. Transfer the mixture to the prepared dish and spread the apples into an even layer.
  7. Bake for 40 to 45 minutes, until the edges are lightly golden and the center is set. If the center still ripples when the pan moves, bake for another 3 to 5 minutes.
  8. Cool for at least 15 minutes, then cut into 8 portions and serve warm.

Notes

  • Use old-fashioned rolled oats. Quick oats produce a softer texture, and steel-cut oats are not a direct substitute.
  • Dice the apples into small, even pieces so they soften during the baking time.
  • Use certified gluten-free oats and verify all packaged ingredients when gluten cross-contact is a concern.
  • Refrigerate cooled portions for up to 4 days or freeze them for up to 2 months.
