High Protein Bananas Foster Baked Oats

Soft high-protein baked oats made with banana, cottage cheese, eggs, ultra-filtered milk, and whey, finished with a warm caramelized banana-cinnamon topping.

  • 2 cups (160 g) old-fashioned rolled oats
  • 1 1/2 cups (340 g) 2% cottage cheese
  • 3 large eggs
  • 1 cup (240 ml) ultra-filtered fat-free milk
  • 2 medium ripe bananas
  • 2 scoops (about 60 g) vanilla whey protein isolate
  • 2 tablespoons pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons ground cinnamon, divided
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • Cooking spray or a small amount of butter for the baking dish
  • 1 medium ripe but firm banana, sliced into 1/2-inch rounds
  • 1 tablespoon unsalted butter
  • 1 tablespoon packed light or dark brown sugar
  • 2 to 4 tablespoons chopped pecans, optional for serving

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9-inch square baking dish.
  2. In a large bowl, stir together the rolled oats, whey protein, baking powder, 1 teaspoon cinnamon, nutmeg, and salt until evenly combined.
  3. Add the cottage cheese, eggs, milk, 2 bananas, maple syrup, and vanilla to a blender. Blend until completely smooth.
  4. Pour the blended mixture over the oats and stir well. Let stand for 5 minutes. If the mixture looks unusually thick because of your protein powder, stir in 2 to 4 tablespoons additional milk.
  5. Spread the oat mixture evenly in the prepared dish. Bake for 30 to 35 minutes, or until the center is set and an instant-read thermometer in the middle reaches 160°F.
  6. During the final few minutes of baking, melt 1 tablespoon butter in a nonstick skillet over medium heat. Add the sliced banana, brown sugar, and remaining 1/2 teaspoon cinnamon. Cook for 2 to 3 minutes, gently turning once, until glossy and lightly caramelized.
  7. Spoon the warm caramelized bananas and any skillet syrup over the baked oats. Let the pan rest for 10 minutes.
  8. Cut into 6 portions. Serve warm, with optional chopped pecans or plain Greek yogurt if desired.

Notes

  • Different protein powders absorb liquid differently. Add a small splash of milk before baking if the mixture becomes much thicker than ordinary oatmeal batter.
  • This is a Bananas Foster-inspired breakfast rather than a traditional dessert preparation; the flavor comes from caramelized banana, butter, brown sugar, vanilla, and cinnamon.
  • Refrigerate cooked portions promptly and use within 3 to 4 days. Egg-containing dishes should be cooked to 160°F.
