  • 2 teaspoons olive oil
  • 1 medium yellow onion, diced
  • 1 1/2 pounds (680 g) 93% lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon fine salt, divided
  • 1 (20-ounce) bag frozen broccoli florets
  • 3 garlic cloves, minced
  • 3 tablespoons (24 g) all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1 cup 2% milk
  • 1 tablespoon Dijon mustard
  • 1 cup (240 g) plain 2% Greek yogurt
  • 1 1/2 cups (6 ounces / 170 g) shredded sharp cheddar, divided
  • 24 ounces (680 g) frozen tater tots

Instructions

  1. Preheat the oven to 425°F (218°C). Lightly grease a 9-by-13-inch baking dish.
  2. Heat the olive oil in a large deep skillet over medium-high heat. Add the onion and ground turkey. Cook, breaking the turkey into small pieces, until the onion softens and the turkey reaches 165°F (74°C). Season with the smoked paprika, onion powder, black pepper, and half the salt.
  3. Add the frozen broccoli and cook for about 5 minutes, stirring occasionally, until hot and most visible moisture has evaporated. Add the garlic and cook for 30 seconds.
  4. Sprinkle the flour over the turkey and broccoli and stir for 1 minute.
  5. Gradually stir in the chicken broth and then the milk. Simmer for 2 to 3 minutes, stirring, until the sauce thickens enough to coat a spoon.
  6. Turn off the heat. Stir in the Dijon mustard, Greek yogurt, 1 cup of cheddar, and the remaining salt. Taste before adding additional seasoning.
  7. Spread the filling in the baking dish. Arrange the frozen tater tots in a single layer over the top and sprinkle with the remaining 1/2 cup cheddar.
  8. Bake uncovered for 25 to 30 minutes, until the filling is bubbling, the tots are crisp and browned, and the center reaches 165°F.
  9. Rest for 10 minutes before dividing into 8 servings.

Notes

  • Cook ground turkey to 165°F (74°C). The center of the finished casserole should also reach 165°F.
  • Do not thaw the tater tots before topping the casserole.
  • For best freezer texture, freeze the cooked turkey-broccoli filling without the tots. Thaw overnight, then add frozen tots and cheddar before baking.
  • Refrigerate leftovers within 2 hours and use within 3 to 4 days. Reheat leftovers to 165°F.
