Creamy horchata-inspired overnight oats with cinnamon, vanilla, almond, Greek yogurt, chia, ultra-filtered milk, and whey protein for an easy make-ahead breakfast.

Ingredients

  • 1 cup (80 g) old-fashioned rolled oats
  • 1 1/4 cups (300 ml) fat-free ultra-filtered milk
  • 3/4 cup (170 g) plain nonfat Greek yogurt
  • 1 scoop (about 29–30 g) unflavored or vanilla whey protein isolate, providing about 25 g protein
  • 2 tablespoons chia seeds
  • 1 tablespoon pure maple syrup, plus more to taste after chilling
  • 1 teaspoon ground cinnamon, plus more for serving
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • Pinch of fine salt
  • 2 tablespoons sliced almonds, divided

Instructions

  1. In a medium bowl, stir together the rolled oats, chia seeds, protein powder, cinnamon, and salt until evenly combined.
  2. Add the ultra-filtered milk, Greek yogurt, maple syrup, vanilla extract, and almond extract. Whisk or stir until the yogurt is fully incorporated and no dry protein-powder pockets remain.
  3. Stir in 1 tablespoon of the sliced almonds. Divide the mixture evenly between 2 jars or lidded containers, leaving a little room at the top for stirring.
  4. Cover and refrigerate for at least 4 hours or overnight, until the oats are soft and the mixture is thick and creamy.
  5. Stir each jar well before serving. If the oats are thicker than you like, add milk 1 tablespoon at a time until the texture loosens.
  6. Top with the remaining sliced almonds and an extra dusting of cinnamon. Taste before adding any extra maple syrup.

Notes

  • This is a horchata-inspired oat breakfast, not an authentic horchata recipe.
  • The nutrition estimate uses fat-free ultra-filtered milk with 13 g protein per cup, nonfat Greek yogurt with 18 g protein per 170 g, and whey isolate with 25 g protein per scoop.
  • Different protein powders absorb liquid differently. Adjust the chilled oats with a splash of milk rather than adding a large amount of extra liquid before soaking.
  • For a stronger rice note, add plain crisp rice cereal immediately before serving; it is not included in the nutrition estimate.
  • Keep refrigerated at 40°F or below. For best texture, use within 3 days.
