- 1 1/2 pounds (680 g) 93% lean ground chicken
- 1 large egg
- 1/2 cup (40 g) gluten-free panko breadcrumbs
- 1/2 cup (50 g) finely grated carrot
- 4 scallions, finely sliced, divided
- 3 garlic cloves, minced
- 1 tablespoon finely grated fresh ginger
- 3 tablespoons reduced-sodium gluten-free tamari, divided
- 2 teaspoons toasted sesame oil, divided
- 1/4 teaspoon ground black pepper
- 1/3 cup (80 ml) unsweetened pineapple juice
- 1 tablespoon (21 g) honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1 tablespoon water
- 1 tablespoon sesame seeds
Instructions
- Preheat the oven to 400°F (204°C). Lightly grease a standard 12-cup metal muffin tin.
- Combine the ground chicken, egg, gluten-free panko, grated carrot, most of the scallions, garlic, ginger, 1 tablespoon tamari, 1 teaspoon sesame oil, and black pepper. Mix gently just until evenly combined.
- Divide the mixture evenly among the 12 muffin cups. Level the tops without packing the mixture firmly.
- Bake for 12 to 13 minutes.
- Meanwhile, whisk the pineapple juice, remaining 2 tablespoons tamari, honey, rice vinegar, remaining 1 teaspoon sesame oil, cornstarch, and water in a small saucepan. Simmer for 2 to 3 minutes, whisking, until glossy and lightly thickened.
- Brush the partially baked meatloaf bites with the cooked glaze. Return to the oven for 5 to 7 minutes, until the centers reach 165°F (74°C).
- Brush with a thin final layer of glaze and sprinkle with sesame seeds and remaining scallions.
- Rest for 5 minutes before removing from the muffin tin. Serve 3 bites per portion.
Notes
- The main recipe is gluten free when made with gluten-free panko and tamari that carries a gluten-free claim.
- Do not overmix or firmly pack the ground chicken; both can make the bites dense.
- Cook ground chicken to 165°F (74°C) in the center.
