Thick, chewy maple-cinnamon cookies made with chickpea flour, sunflower seed butter, rolled oats, hemp hearts, and flaxseed. Each large cookie provides approximately 11 grams of protein.

Ingredients

  • 2 tablespoons (14 g) ground flaxseed
  • 5 tablespoons (75 ml) water
  • 1 cup (256 g) smooth unsweetened sunflower seed butter, well stirred
  • 1/3 cup (80 ml) pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup (120 g) chickpea flour
  • 1 cup (80 g) old-fashioned rolled oats, certified gluten free when needed
  • 3/4 cup (120 g) hemp hearts
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. Stir the ground flaxseed and water in a large bowl. Let the mixture stand for 5 minutes, until thickened.
  3. Add the sunflower seed butter, maple syrup, and vanilla. Stir until smooth, scraping the bottom of the bowl.
  4. Add the chickpea flour, rolled oats, hemp hearts, baking powder, cinnamon, and salt. Mix until no dry flour remains.
  5. Let the dough rest for 5 minutes so the flour and oats can hydrate.
  6. Divide the dough into 12 equal portions, using about 3 level tablespoons each. Roll gently and place 6 portions on each prepared sheet.
  7. Press each portion into a round about 3 inches wide and 1/2 inch thick. Smooth any cracked edges with your fingertips.
  8. Bake for 10 to 12 minutes, rotating the pans halfway through if needed, until the edges are set and the centers remain slightly soft.
  9. Cool on the baking sheets for 10 minutes, then transfer carefully to a wire rack and cool completely.

Notes

  • Stir natural sunflower seed butter thoroughly before measuring so the oil and solids are evenly combined.
  • Weigh the chickpea flour when possible. If the dough is crumbly, add water 1 teaspoon at a time; if it remains sticky after resting, add 1 tablespoon chickpea flour.
  • Do not taste raw dough because chickpea flour is a raw flour and should be baked before eating.
  • Store cooled cookies at room temperature for up to 2 days, refrigerate for up to 5 days, or freeze for up to 2 months.
