A creamy slow cooker curry made with brown or green lentils, sweet potato, tomatoes, coconut milk, warming spices, and lime.

Ingredients

  • 1 1/2 cups brown or green lentils, rinsed and checked for debris
  • 1 medium yellow onion, diced
  • 1 large sweet potato, peeled and cut into 1/2-inch cubes (about 3 cups)
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon fine salt, plus more to taste
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 tablespoon fresh lime juice
  • Chopped cilantro and lime wedges for serving, optional

Instructions

  1. Add the lentils, onion, sweet potato, garlic, ginger, diced tomatoes, vegetable broth, curry powder, cumin, turmeric, and salt to a 5- to 6-quart slow cooker. Stir well so the lentils are covered by liquid.
  2. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the lentils and sweet potato are tender. Begin checking at the earliest listed time because slow cookers vary.
  3. Stir the coconut milk until smooth, then add it to the slow cooker. Cover and cook on high for 10 minutes, until the curry is hot and evenly creamy.
  4. Stir in the lime juice. Taste and adjust the salt. If the curry is thicker than desired, add warm vegetable broth a few tablespoons at a time.
  5. Serve hot with optional cilantro and lime wedges. Rice or flatbread can be added alongside if desired.

Notes

  • Use brown or green lentils. Red lentils break down faster and will produce a much softer texture.
  • Cut the sweet potato into even 1/2-inch cubes so it becomes tender at the same rate as the lentils.
  • Do not add the coconut milk at the beginning; stirring it in near the end gives the curry a smoother finish.
  • Transfer leftovers to shallow containers and refrigerate promptly. Refrigerate for 3 to 4 days or freeze for up to 3 months.
  • Nutrition values are intentionally omitted because brands of coconut milk, broth, canned tomatoes, and serving portions vary.
